Incubation:
The jars should be stored at 21-27?C (70-81?F), the warmer the better, but not exceeding 27?C. Place the jars in a sterile container and keep out the light from these fresh cakes. Dependent on the temperature it takes 14-25 days for the mycelium to colonize the whole substrate.
Casing:
Case Mix (45% Vermiculite / 45% peat moss / 10% oyster shell) PH is at the 7.0 - 7.5 level. Gently crush substrate in a sterile bag. Fill case 1/2" soaked perlite, 1" crushed substrate and top off with 1/2" casing mix. Cover each casing with sterile foil and leave covered 3-5 days for pinning. Store the case at 21-22?C. When pinning starts add a thin layer of casing mix over showing pin patches to have even mushroom development. After adding second casing layer leave the casing open with the top (mix) showing. Fruiting:
Allow indirect light into fruiting chamber 4 - 12 hours a day (cool white fluorescent light is best *15watts). For casings you want around 82%-92% humidity and your temperature to be around 25-28?C. Fill 1/2" - 3/4" of soaked perlite on the bottom of sterile Rubbermaid container, put the casings inside, and put the top cover to the rubbermaid container back on. Fan out the container once a day for gas exchanges. In the next 7 - 10 days casings will fruit and be ready to flush. Pick all the mushrooms off the case even aborts. Lightly scrape the top layer of the casing and get ready to dunk the casings for the next flush.
Case Dunk:
Remove the casing from the pan and carefully wash off loose casing material under a faucet. Fully submerge the open casing in a container full of water and store in fridge for 24 hours. Drain the casing for 5 - 10 min. Apply a thin layer of perlite in a sterile pan and set casing back in. Apply thin layer of casing mix to the now post dunked casing. Place casing back into the fruiting chamber and wait for the next pickin...

with the casing, you only need 1/2 inch for 6+ inch substrate depths. try more like 1/4 inch to half inch. and dont put perlite in the bottom of your casing. you may have luck, but i find thicker than an inch colonized substrate is not neary enough, try more like 4 inches

Incubation: Actually, 82-86F is ideal, so I'd say shoot for 28C, but don't exceed 30C.
Casing: Personally I wouldn't advise using a bottom casing layer, as it can be an ideal breeding ground for contams, which would be nearly impossible to detect since they're under the substrate. You don't patch over pins, you patch over the bits of mycelium that are growing faster than the rest of the casing, so that the mycelium in the rest of the casing has a chance to catch up. The point of this is to strive for even colonization of the casing layer, thus an even, prolific pinset. You incubate the casing at the same temp you incubate jars.
Fruiting: 4 hours of light is a bit on the low side. 8-16 is preferable. When you first put the casing in the fruiting chamber, you want the humidity to be around 90-95%, once pins develop you drop it to something more like 85%. And you should really fan it wayyy more than once daily. 4-6 times is optimal if you can manage it.
Dunk: That should be fine for the most part. You don't need to cold shock it in the fridge, as the effects are debatable. If you do decide to put it in the fridge, make sure it's sealed up nice and tight, you don't want it to get contaminated, as fridges are nasty places. In fact, the best way to dunk according to RR is to just put the entire casing under a faucet with a very slow stream of water running onto it.

You should be in for some fun if you follow those guidlines. I keep my incubator at 80-81f and it works great. Make a TiT cause it is not to expensive and works great for incubating. Good luck man!

The jars them self make heat from the myc growing so I say shoot for 80-82f

I thank everyone for their help I feel ready and confident with this grow. I should be getting my spores on Thursday so clean and sterilize till then. This is a first grow well mushies anyway, I don't think that casing should be a problem for me! ;-) Will start a Log soon so watch for it.

So my casing should be 1/2" casing mix, 2" substrate and 1/4" casing mix? Or 1/4" bottom then 2" substrate and 1/2" top?
