Dunking Correct!

Hey,
So I had 18 cakes over at a friends house that stopped growing. We only got a yield of 5 grams. Our problem was with humidity causing the cake to dry a little and stop pinning.
I have heard people talking about dunking, but I am not sure on the correct way to do it. Should I sterilize the water first? or use bottle water? Do I just put them in a bucket? How long do I leave them in there?

Any help that you could give me would help me a lot. Thanks everybody.

Tap water is fine.

Put the water in the jars and then put the cakes in the water filled jars. If you need to, place some sort of weight on top of the cake to keep it submerged. Place the lid in the jar and, if desired, place them in the refridgerator.

I think 12 hours would do your cakes good. I find that 24 hours is a little long.

or you can use milk. (adds nutrients as well as moisture)

where do you find a tek on this ? Ive looked but have never found one yet.

if you want to use milk,
use the powdered non-fat dry milk.
it's less contam-laden,
and you can mix it stronger than ordinary milk.
a milk dunk must be done under refridgeration,
and a good rinse, preferably a bleach dip, afterwards is
also essential.
the dunk tek can be found in the faq here
or on my site's tek section.
