CHICKEN Jambalaya

Actually never having tried any jambalaya ever and always thinking of Newman from Seinfeld going: "Jambalayaaaa!" when he gets it from the Soup Nazi, in addition to seeing You_Suck's recipe, I googled Chicken Jambalaya and found this (the first hit actually):
1/3 cup celery -- chopped 1/4 cup onion -- chopped 1/4 cup green pepper -- chopped 2 cloves garlic -- minced 2 tablespoons butter or margarine 1 can tomatoes (14 1/2 oz) -- cut up 1 1/2 cups chicken broth 2/3 cup long-grain rice 1/2 teaspoon dried basil and thyme -- crushed 1 1/2 teaspoons Cajun seasoning 1/4 teaspoon black and cayenne pepper 1 teaspoon tabasco sauce 1 bay leaf 2 cups cooked chicken or turkey -- cubed
In a large skillet cook celery, onion, garlic and green pepper in butter or margarine till vegetables are tender. Stir in the undrained tomatoes, chicken broth, rice, basil, thyme, Cajun seasoning, peppers, Tabasco sauce and bay leaf. Brink to boiling; reduce heat. Cover and simmer about 20 minutes or till rice is tender. Stir in chicken or turkey; cook till heated through. Discard bay leaf.
Well anyways, I made this today step by step and it is fucking delicious. It is a lot more colorful and spicy and aromatic. The rice was cooked to perfection and the zing of it was delicious. Heres a pic of the final product:

I think You_Suck said he didnt like tomato based jambalaya but I got the good Del Monte tomatoes and oooooh man was this dish good. Took about an hour to make and it made the whole crib smell delicious. Check this out people it only cost like 15 bucks and it will serve atleast 4 people.

I just made this last night, it's quite good. Thanks for the recipe! I had to cook it for a lot longer than 20 minutes before the rice was done though. If you don't have Cajun seasoning, here's how to make a substitute:
6 parts salt 1 part cayenne 1 part red pepper (ie. pizza pepper) 1 part paprika 1 part garlic powder 1 part onion powder 1 part black pepper
For this recipe which calls for 1 1/2 tsps, 1 part = 1/8 tsp (duh).
Also, I added about 1/4 cup of chopped jalapenos and I used 1 tsp Spicy Caribbee Green Heat and 1 tsp Frank's Xtra Hot instead of nasty Tabasco.

i used Cholupa instead of tobasco, only hot sauce i buy

My God man, at one point I respected your opinion on food. Tabasco is the height of all hot sauces, the other ones have their place. Marie Sharps is good on some things, Franks is good on a small number of other things. Spicier hot sauces have their use. But Tabasco is good on everything. I might take that shit to a 400 hundred dollar a meal restaurant. Douse the foie gras with it then kill the chef, bolt and never been seen again.

Since we seem to be gettin' tangental anyway... don't you mean Cholula? Cholupa sounds more like those freak tacos they serve at Taco Hell!
And to TheCow, some people just can't hang with hot sauces that exaggerate their vinegar component as heavily as Tabasco. I personally find it a sour taste, quite literally on account of the vinegar content. When I look for a hot sauce, I most often aim for HEAT as the primary taste factor - and when it comes to Tabasco (which I will use but generally don't prefer), it is pretty well split between heat and sour as the two major taste components. It's just so tangy, and when I'm trying to spice up a dish, I don't typically want to add such a strong sour taste to the original combination of flavors on the plate.

Yea I dig it, I just like being as overbearing as possible. The tanginess I find works on almost all food, but as I said there are certain times for other hot sauces. Sometimes Ive been known to combine several varieties of hot sauces. And of course sometimes im in the mood for a hot sauce that has other things in it besides pepper and vinegar, some spices or vegetables blended up with it. Ive been known to wander, but Ill always come back to that beast, the whore who is passed around the whole world, the spicy red Overlord whose Overmind can only be God himself

You might as well just put vinegar on everything and not even bother with hot sauce.
Because that's all you taste with tobasco. Orange vinegar.
There's lots of things i'd rather use than tobasco. Such as hot sauces which have ACTUAL pepper flavor rather than vinegar.
Tobasco isn't even in the top 10 best hot sauces I've used. It's the crap you use when it's the only thing on the table.

and to say the tanginess of tobasco vinegar works with almost all foods...oh please.

I like to dip my fries in balsamic vinegar.
But, tobasco is for the birds nowadays...it used to be good but then better shit has presented itself and now I'm a Franks fan.
