Thats all I use for long term buffer. oyster shell flour actually does help with a casings structure but thats not what I was referring to, I was saying if they say the courseness helps structure thats BS although it would thats no reason to use it as your other ammendments are what really makes up your casings structure but you already knew that. I'm not here to BS anyone just teach.

If you don't have Ph strips, or a Ph tester.

I would not fool with hydrated lime AT ALL.

I use 1tsp. short term (hydrated) per qt. of casing mix and 1-2tbs. of long term buffer. It works for me.

I have PH strips. They should read ph7, right? The 50/50+ casing recipe is 3% lime, I think. I will add 2 1/2 times the verm, peat, & calcium. That should bring my mix down to 3% lime. I'll test it with a strip.

I just tested the mix.  It tested pH 6.25.  I added more peat and verm about 2 1/2 times by volume.  Tested again, it read pH7.  However, this doesn't make since.  Lime is like pH 12.4.  My mix read acidic not basic. :confused:

Anyway, it now adhears to the 50/50+ recipe.
