What's For Dinner?

I'm going to make a sausage, roasted pepper, and onion pizza. About to go make the dough and roast the peppers after I post this. I want to make two, but I'm not sure what I want for the other. Maybe white, or maybe BBQ chicken. I don't know.
What's on your menu?

Well, last nite was chicken and mushroom gravy with fried okra, baked potatoes, and garden peas. Therefore, tonight will probably be $1 frozen pizza with fresh mushrooms and onions on it, unless I feel like actually cooking.

I'm gonna have to give that shit a whirl. Not sure if there's anywhere around here that has it though. What's the best in your opinion?

Well first you have to find a quality sushi joint. Some places are kind of shady, and don't use the best quality, and freshest fish available. If you know anyone who eats sushi.. ask them where the good places are in your area.. do some research first.
Second - there are many, many kinds of sushi and different recipes vary from place to place. As do tastes. Some people love certain types of fish, while others do not at all. For example, at the place I work.. we have a hawaiian sushi dish called tuna poke don.. raw tuna marinated in hawaiian spices (kind of sweet and salty.. really fucking good).. served on a bed of sushi rice with seaweed and pickled vegetables. It's my absolute favorite dish. But, we only have it because the sushi chef used to work at a sushi place in hawaii.. and it's his secret recipe.
Other sushi places have things that we don't have. But we have 180 different types of rolls.
You have two types of sushi - nigiri, and maki. Nigiri is a slab of sushi rice, with a piece of raw fish on top of it. That's it. Usually there's a smear of wasabi on the underside of the fish. That's the original sushi... you put on some wasabi, dip it in a little soy sauce.. and eat it in one bite. Maki are the rolls. What most people think of when they think sushi. You can have anything in the rolls.. but there are standards at every sushi place. Usually it's one or two types of fish, cucumber and/or avocado.. could be some crab in there, any number of sauces.. scallions.. the options are unlimited.. it's wrapped in seaweed coated with rice and one roll is cut into 6 pieces. Some rolls are even deep fried, some have cream cheese in them.. some have fish on top in addition to the ingredients inside the roll.
There's a million different rolls and a hundred ways to make each of them. The one everyone knows is the california roll - crab, cucumber, avocado. They are ok.. but about as lame as sushi gets in my opinion.
We have so many custom rolls.. I don't know what other sushi bars call them. I like the Ft Belvoir Roll, and the White Magic Roll (I invented one).. FT Belvoir is spicy tuna, jalepenos, onions, cilantro, and lime juice.. rolled up.. with spicy salmon on top. Very unique.. and fucking good. White magic roll is yellowtail, cucumber, avocado, spicy sauce, and crunchy tempura bits, with white tuna on top.
Other standard rolls that are really good is : Rainbow Roll - a variety of fish (mostly tuna and salmon) on top of a roll with little bits of colored tobiko (flying fish eggs) Flying Dragon Roll (basically a california roll, with eel in it.. and a whole eel on top of the roll, with eel sauce) Most people think ewww eel.. but it's fucking good. It's all in the sauce though. Sushi chefs usually make the sauce from scratch.. if they don't.. go somewhere else. Experiment.. find what you like..
However.. if you want to experience true sushi, the way it is meant to be.. you have to eat nigiri. You can usually order nigiri by 2, so it is easy to order maybe 4 different kinds of fish, and try a roll or two. We are talking two bite sized pieces here. My favorite nigiri, by far.. is tuna (maguro), and yellowtail (hamachi). Simple. I really like spicy tuna, and spicy yellowtail.. but I can eat them plain too.. the flavor is soo good. Unagi (eel) is really good too.
But mostly it depends on your tastes. You have to experiment at first, find out what you like. Some people love octopus.. I can't stand the texture. Some people eat the hell out of uni. I tried it twice and almost puked both times. You don't even want to know what it is.

It's extremely healthy. Look up the health benefits of raw fish.. then look at seaweed. Rice. Vegetables. You can't go wrong. It's a complete nutritious and filling food.
Oh and thanks!

Chipotles are the greatest thing in the world. I have a giant bag of them I smoked myself, and a big bottle of sauce I made from them.
Viva chipotle!
