I've finally got my hands on some horse poo! My friends brother owns 2 horses and stables them at this little horse ranch not too far from me. So I go up there and tell the owner my friends brother mentioned that I might be able to pick up some manure. He was happy to oblige, I even got the feeling I didn't need to throw out any names. He told me "Come back and get as much as you want, whatever's left at the end of the year, we have to pay to get taken away". Music to my ears 
Anyway, here's my procedure, please correct if you see any mistakes.
It's fairly composted, and was from last season. There was another pile of fresh stuff I didn't mess with. Should I have gotten the fresh stuff? I figured composted would be better.
I've got it laying out about 2-3 inches thick, and will turn it once a day (or more). Once it drys, I'll runn it through a screen. I'm thinking that since it's composted, I won't need to leech it. It has a slight crappy smell, but not very noticable. It's not quite as dark as reed sedge peat.

If it's composted to the point of black, soil-like texture, it's no good. Tried that in the past with zero results.
Better to start with fresh if that's what is available, and leech it a few weeks outside, then dry.
You want this texture:

Does it still have a high fiber consistency?
Are any nuggets / muffins....still intact?
 Does it look anything like this h/poo?
If it still has a fiber like consistency, it is good for substrate. (caveat... once any ammonia and/or fecal smell is gone)

Diver I use soil like texture with great results, Im not questioning you but it does work...
