Ok yeh so i was lookin at magash's rye tek and the wording was confusing...

"...This is the reason we soak the grain. Many believe that this is where water is added but this is not true. We are germinating the bacteria endo spores because they can survive a PC if we don?t.

3. I pour out the water and fill and shake and pour that out. Put in a pot and the water is ready to simmer for 45 min. During the simmer is when the water is added to the grain

4. Simmer the grain and then rinse with water. I like to pour 6 gallons threw the grain. (no reason for 6 it?s just a me thing) The grain is ready to be put into jars and PCd."

Ok i want to get this right you pour all the water out after the soak... but then he says "put in a pot and the water is ready to simmer", but then he says its during the simmer you add the water, in that case how do you begin to simmer DRY grain ... could somebody break this down for im sure it makes sense im just thinkin too hard or somethin i cant figure out what he means?

soak it for 24 hrs,then pour out your water and put the grain in a pot with water, then simmer..let drain ..then jar it up :wink:

but what does he mean when he says during the simmer is when the water is added to the grain? i copied that straight from his tek

What he's saying is that the grains are _absorbing_ water during the simmer. They'll absorb water during the soak too. It's just a matter of preference. You can soak for 24 hours, wash and PC. You can go straight to a simmer. You can do both. I prefer to soak 24 hours, if only for the reason he mentions, germinating endospores. Then I'll simmer til grains are bursting. My next batch I'm gonna do a 24 hours soak, rinse, and go straight to the PC from there, primary reason being that well hydrated grains can be a chore to break up, especially if you let them sit for a while after they're fully colonized. I've done something similar, 24 hr soak followed by a 1 hour hot water bath (boil water, remove from burner and add seed). That colonized fine, I'm thinking just soaking for 24 hours will work fine too. Whatever you do, it'll probably be fine. I've had seed that looked too dry, seed that looked too wet, and it all colonized fine. Only thing I would mention is that it's a bad idea to let your jars cool completley inside the PC*, especially with well hydrated grains, this can cause a good bit of starch to form at the bottom.

*Some people recommend removing the jars from the PC after pressure drops, dumping the water, adding the jars back, and securing the top for the cooldown. It could be more sterile, it could be a way to prevent moisture loss during cooldown. I've done it, but generally just remove my jars ASAP and let them cool on the counter.
