lids on jars on right, or upside down?
    #528762 - 01/23/02 12:17 AM (22 years, 10 months ago)

i heard its better to have the jar lids upside down so that there is never a vacume seal with the lil rubber ring, which will allow more oxygen in the jar. is this true, and is it better to have the lid upside down when pressure cooking jars, and better when theyre sitting there growing mycelenium(sp?)

Yes

"and is it better to have the lid upside down when pressure cooking jars"

Yes.....But don't let water splash up and into the jars.

"and better when theyre sitting there growing mycelenium"

Yes....keep the jar lids turned upward with the seal up during colonization.
Open the lid a little after the jar has colonized about 40% to give some air exchange.
I flip my jars when i need to colonize the bottom part of the jar.
