In the past I've filled beer cans with water and then frozen them and placed them in my fruiting chamber to cool it down. It's effective to a point, but it's a bloody nuisance having to constantly replace the cans. I'm in the process of converting a small fridge to serve as a fruiting chamber for cool climate species.

Blow a computer fan across a damp towel. This will drop the temp 5 degrees or so and also give a bit of humidity. A cool mist humidifier will also lower temp slightly by absorbing energy(heat) to evaporate the water droplets. RR

I have heard of using frozen bottles to lower temps, they are easily reusable.
But your are using energy in your freezer to freeze the water still, don't know if it is more efficient than AC.
I think I read about someone using dry ice, but this was for cold shocking which IME is not neccessary.

using dry ice is going bring your humidity down. that, and it is a lot more expensive than regular ice. the coolmist, towel evaporation, ice, whatever are pretty good ideas. i'd watch to make sure your damp towel doesnt get mildew though.
