    #5285679 - 02/10/06 12:19 PM (17 years, 11 months ago)

hey i plan to sterlize my cake 1/2 pint jars by boiling them for 90 minutes but the paperwork i've got is saying if you boil for too long too much water will evaporate... is this true or not? i don't see how water can evaporate from a sealed jar?

also is it better to microwave the filled jars b4 inocoluation or is boling a good idea? i have no pressure cooker

IT's true, there is some vapor exchange in the jars to blance the pressure. Boiling is easier for someone new to the hobby.

You don't want to completely seal the jars, they could crack. People boil for 90 minutes all the time. As long as you have some kind of filter(or foil) you will be fine.

Exactly.

I've never used a microwave personally(well, for this). You really should think about getting a pressure cooker, but boiling is just fine for PF cakes. People have been doin it for over 20 years.

You can microwave casing material, but microwaving substrate isn't a good idea. Either take mike's advice and get a PC, or do the 90 min boil with the lids not fully tightened, covered in foil.

::EDIT:: yeah, sin's got the idea and beat me to it.
