I know over night is no biggie, they can last longer but the moister content might get fucked unless you can compensate for that.

You should be fine for a few days. Just dont let it dry. Keep it in a semi humid room. I once had a myco bag of rye grain and it took 1 month for the spores to germinate. Unitl they did it did fine.

If you let them sit for 2 days and then vacuum-seal the jars, they'll last you up to a month. I usually put Gypsum in mine as well....

well if thay are Canned "vacuum sealed ie lid down no hole" thay should last years in the dark. aftter all it is canning and what the hell does the fact that you put gypsum in your grain have to do with how long it last ? FYI gypsum will lower the ph over time so you should buffer with calcum bycarbonate or lime /mush piss lowers the ph too so adding a buffer will help get more flushes

Nobody 'cans' rye berries. They will be in a jar with holes and a filter of some sort.
I've waited as long as two weeks to inoculate jars, but that is pushing your luck. Do it as soon as possible.
Gypsum won't lower the ph. It is a buffer that tends to keep the ph at neutral. Gypsum contains both calcium which raises ph, and sulphur, which lowers ph. Between them they work to avoid swings in the ph. Gypsum is great for use with rye berries, as both calcium and sulphur are necessary nutrients for fruitbody formation, and as an added benefit, the gypsum keeps the berries from sticking together. RR
