growing too fast!!! casing questions.

I made some casings a few days ago and the mycellium is showing through in a good few spots. Great! right? well, the problem is... I am going on a little holiday this weekend and I am afraid when I come back, they will need to have been placed in my fruiting chamber already. I am mainly trying to avoid overlay. I guess my question is... if I allow the casing to keep growing and becoming stronger, will I still be able to get a good pinset? Is there anything I should do to slow the growth a little while I am gone (lower the temperature, etc?)? I can have a friend who has grown cakes semi successfully, watch over them, but this is my first grow and I am really enjoying doing everything on my own.
other pertinent info: -single pf cake underneath -temp ~82 degrees f. -50/50+ casing tek with a little bit of hydrated lime -cased feb 5th -first high spots covered on about the 7th -how it looks now:

you know you like that tin!

OK cover it and put in the fridge. If you have a big Tupperware use that. optimum fruiting temps are 72-76. 82-86 is incubation.

updated! here are some pictures of where I am now. I have moved the casings to the FC and I am giving them about 8 hours of light a day and 74 degree temps. humidity is about 70 in the fc, but I am keeping the lids on the tins to keep microclimate a little more humid to allow pinning to begin. Any thoughts on how long it will take before I start to see some pins, or any other suggestions? Just a little "hell yeah, lookin good" would even be nice. thanks!

They do look good, so hell yea to you...
I'd give them more than 8 hours of light each day, more like 12 is good for inducing pins.
Also, take the lids off. Myc needs, and wants as much Fresh Air exchange as possible (with out drying out your casing of course) to induce pinning.
Make to sure mist lightly once or twice a day as needed, making sure your casing layer doesn't dry out. DONT OVER MIST THOUGH! I've made that mistake in the past and doing so can cause overlay!

thanks, I will keep updates going. I am really excited to see the results of all of this. I tried cakes before and they didnt do ANYTHING! I think my humidity was too low, then they became contaminated, as far as I could tell. The myc had a blue/green hue to it. They are broken up out in the garden now. (maybe I will get some on a hunt this spring!)

I doubt they were contamned, blue/green hue is most likely bruising. I've had some cakes get pretty funky looking, but they weren't contaminated.

now for the good news: they are pinning! I have one casing showing about 7 little guys and the other casing is knotting up all over the place, I cant wait to see how many continue to develop on there. I will post some more pics when I can get a good shot.

updated picture. This is the casing with the first pins I saw. Just 7 of those little guys getting big right now. The other casing has more pins than my eyes can handle. Thinking in the 80-100 range, all about the same size, great set. You cant really see cause I dont have a camera that has a good macro shot, but there are many more very small pins on this casing too. Which leads to my next question... Since I didn't get a perfectly even pinset, can I just harvest these 7 when they mature and allow the rest to grow? Or, do I need to remove all of my crop at once and hope for a more even pinset on flush #2? Thanks again!

here is my second casing with a good looking flush. I picked the mushrooms off my first casing just a few minutes ago.
