I would think that maple syrup would work, being that it is high in sugars and contains micronutrients, but one advantage of honey is that it is lighter, so it's easier to see contams. Maple syrup is usually really dark.
Another advantage of honey is that bee pollen, which honey contains, has homobrassinolide in it, which stimulates mycelial growth.
Make sure it's real maple syrup and not the crap in the plastic bottles at WalMart (high-fructose corn syrup and flavoring).
Can't hurt to try the syrup.

Yes, actual maple syrup - will work (not optimal).
Hell, 5% apple juice works great.
If you want funny COLORS.
Coolaid made with dextrose will work.

I don't do cakes, so I know NADA - there.
If you water a bulk sub, with artificially colored water, just as pins form. Then, more as they grow, it can sometimes result in a tinge of that color in the fruits. Simply because the capillary water action will move some of the coloration into the tissue.

i decided that in lieu of building a glove box, i will do a liquid culture experiment. i want to start 3 each of karo light, honey, and maple syrup. (when i start brewing again, ill try different dry malt extracts). I may use agar's baby bottle tek, which i need to research, or some other filtered method. Ill keep everyone up to date
