Generally speaking, mushrooms reach a peak concentration of psilocybin during the "juvenile" stage. Then, as they increase in size, the amount of psilocybin stays about the same, but the amount of mushroom mass increases, so concentration decreases.
So if you let the mushrooms mature, they will have about the same psilocybin content, but less concentration.

This is a highly debatable topic that hasnt been proven, I let my shrooms get a little mature, and I dont have any problems with potency.

Two shrooms. The big one, is what I would choose. Potency (no matter the size)has NEVER been an issue. When optimal substrates are used.

Yeah, anyone that's ever tripped out of their mind on one large shroom (been there, done that) will tell you that they don't put too much stock in the large-shroom-means-less-actives theory.
I've tripped on one 45 gram wet shroom that was just as potent as 4.5 grams of immatures. I've also tripped on half a 80 grammer that gave me almost the same results.
