You should really PM each other with specific information, especially living in Texas with the very harsh mushroom laws there.
There is a ton of information about growing and hunting, search around.
But from what I picked up so far, which might be wrong... Is:
If the gills are brown, to purplish black, they are active. If they have orange, green or white gills, they are probably poisonous and definetly not active.
I'd read everything I possibly could and view all the pictures on here, and check this out before even attempting to pick, then before you eat them, post pictures of the shrooms for the experts on here to identify.
The shroomery is a great starting point.
This guy knows his shit too. http://www.erowid.org/plants/mushrooms/safe-pik/safe-pik.shtml

uhhhhhh, no. there is no one feature that can be used to identify active mushrooms. you need to consider many things. trying to simplify something so complex to a "rule" based on one feature will never work.
there are plenty of mushrooms out there with brown gills that will make you sick. the rest of the advice was good though ...

dude,
shrooms can be identified by physical features...tats how you know which ones to eat living on a cow farm you will be hunting pilocybe cubensis. they ae very easy to tell apart from the others once you learn what they look like. look up descriptions and pictures of Psilocybe Cubensis

all you need to do is look for a cap that is golden in the middle and the outer edges are either purple or white. look on the stipe (stem) and there shold be a purple ring just below the cap. pinch the stem adn see if it bruises blue. once you find your first cube you will be able to spot them very easily
