...Are you sure it's coco peat? Because peat generally refers to peat moss... and coir is coco coir. They're two completely different things.
Since you're talking about bulking up a substrate, I'm assuming you mean coir, as it's rather nutritious (especially in comparison to peat). You really can add as much coir as you want, since it is rather nutritious, but generally the more poo, the better. I'd probably go with like 75/25 or something like that. But like I said, you can use as much coir as you want.

i would add verm before i would add coir. coir is not bad to add, necessarily, but verm would be the first thing to consider adding.
why do you want to add coir?
i have trays of chredded poo/a little straw, fine verm, chunky verm, worm castings, coir. the verm adds moisture retention and makes it more airy. i don't feel that i need to explain the worm castings, nutrients and texture. coir helped make the texture more fibrous. poo already does this, but it was off-set by the castings. castings are very fine and give a good texture when balanced with coir and verm. i ended up with a very nice substrate, but i would have liked to have added some other nutrient sources, or used a good compost in place of the horse poo.
bring it to proper moisture, bag it up, pasteurize. go for a 20% spawn rate or something. that will do very well.

Good idea, horse manure does really well when supplemented with coco coir. I've been doing it for awhile now, and generally cut it 50% to a tray of manure.
Just prepare it to field capacity (few drops come out when squeezed hard) and do the same to your manure, then mix the two together very well. Pasteurize as a whole, and spawn once cooled. For those that have a hard time obtaining poo, this is a good way to stretch it out twice as long. Yes, coir is more expensive, but sometimes availability outweighs the costs.
Coir has proven itself to improve colonization times and overall texture--in my experience thus far.

I agree with HD. I have noticed quicker colonization times with coir mixed in my poo. I don't use it as a casing anymore because it colonizes too fast.
