Mexasiacan Food.

Im going to invent something tonight.  Something wonderfull.

Im going to stray from my diet and make Mexican Pot Stickers.  From now on to be known as Mexasiacan Dumplings.

First take 4 Boneless Skinless Chicken breasts and in a small baking pan add one chopped onion and one large can of enchelada sauce. 
Seal the pan well with tin foil and bake @ 325 for two to three hours.

Mince up Bock Choi, Celery, Green Onion, Fresh Garlic, Snap Peas and whatever else is in your fridge. 

Shread the chicken breast and stir in the chopped vegies then spoon the mix onto your dumpling wraps and seal.

Make them nice and fat with lots of meat.  I like the pot sticker idea with these but Ill make a few dim sum dumplings just to try them too :grin:

Stream the dumplings till the skins are cooked and let cool a few minutes before sauteing in a skillet with oil and unsalted butter..

Ill serve this with plain white rice :thumbdown: Butttttt its a good alternative to spanish rice.

This should bring me about:
10 G of fat
830 Mg sodium
130 G carbs (51 are not the good kind)
and a butt load of protein and vitamines.

Still doin better than the 1700Mg sodium in the soup Ive been eating..

I should start feeling a BIG change in my body from cutting back on the salt.  Last time I did this I got diarreah and had to ballance that out with more fiber..

Did you know that in most major bicycle races, all the real hardcore riders piss themselves while riding..  The true hardcore do number 2 to avoid cramps :confused:

But empenadas are made with more of a bread kinda dough and these are made with more of a noodle type dough and all I had for veggies were the same I got from the asian market.

Id say theyre more like pot stickers with spicey chicken.
