Hey manna If I were you I would put the colonized cakes in the Hydrapod and cover them with syran wrap until they pin for you. This worked for me and Mycotek recomends it to. Here is a picture of some cakes that were just uncovered from the syran wrap. You can see how well it works to make cakes pin.
The cake on the right with the one big shroom was the only cake that was left uncovered and it didn't do near as good as the rest of them that were. Of course I had this Pod set to fruting instead of pinning so I expected it to not do good. You can see the difference in the knots when you look at the other cakes that were covered with the syran wrap.

Just leave the bags alone. If you have pins, you will soon have full grown mushrooms. All they need is light and a warm place (75-80F) for a week or less. Hang in there. Don't risk opening the bags now, just let them do their thing. When you are forced to open the bags to harvest, you can decide if you want to experiment with other suggestions. Take pictures and record wet and dry weights if possible.
The number of pins you get really isn't important. If you get tons of pins expect tiny mushrooms. If you just get one pin, expect a very large mushroom. The final weight will tend to be about the same in both cases.
I posted an overview of the flushes I have harvested so far in Mushroom Pictures. Clickable link below.
http://www.shroomery.org/forums/showflat.php?Cat=&Board=Pictures&Number=527012&page=0&view=collapsed&sb=5&o=&fpart=
I think I only harvested 5 mushrooms from the first flush, 3 from the second and only 1 from the third (and probably final) flush.
