Ive made these a bunch of times before.. Used to eat them up at a chineese buffet in Vallejo and CRAVED them once I moved..

Now Im pretty good at them. Just need a REAL steamer, one of them bamboo things that you can stack and steam everything in ontop of a wok.. Ive looked and looked and cant find one anywhere.

Anyway...

Recipe is (with no measures, just add to taste. this is what I like) Feel free to experiment with your own recipe, you can add anything.

Only thing thats a must in the recipe is that everything needs to be minced. Chop it up nice and small and all will go good..

Carrot
Celery
Green onion
Garlic
Bean sprout
Salt
Pepper
Ground chicken
plus a bit of "asian bbq" Its a thick sort of no salt soy sauce. Pretty good on everything.

I learned that its easier to make the dumpling shells first and then to fill them with the meat mixture.. Try to mold dumpling wrapper around a spoonfull of meat and your just wasting time..



I NEED A STEAMER.. I have to steam mine in a pasta strainer over a pot of boiling water with a lid.. The bottom is round so I can only do a few at a time...


Dumplings are done once the meat is cooked.. the pasta outside is soft and flavored with the juices of the meat.

Here I have some white rice, the last of my Kim Chi, a bunch of dumplings (the rest Im bringing to work tomorrow) plus a bowl of Soba noodles with mushroom broth, peppermint decaf tea with honey and the beer is what brought you this thread..

those dumpings look awesome. I bet you could make a lot of different variations on that recipe, like maybe one time add a bit of fresh cilantro, or another time put a little shrimp nestled on the top or some chinese sausage finely chopped into the mix. Maybe some chopped shiitake mushrooms.

I usually just buy frozen dumplings at this chinese bakery and keep them around for parties and snacks. I'm kind of a dumpling addict, I have to have dim sum at least once a week.

It seems to me that Bed Bath & Beyond actually carries bamboo steamers, if you happen to have of of them in your area.
