Carne Asada

Carne Asada:
2lb Flank Steak
2 Limes
1 Lemon(s)
2 Clementines
3 Cloves Garlic, minced
1 Jalapeno, seeded and diced
1 Onion, chopped - Sometimes I use shallots instead
1T Fresh Cilantro, chopped(optional)
1t Pepper

I still haven't decided on how I best like to marinate. Usually it's just how lazy I feel. Either cut the flank into thin strips, or leave it whole. Throw it into your marination vessel(zip top bags are best) and toss everything else in. Get it all good and covered, and let it sit for at least a couple hours.

Fire up the grill. While that is heating, make up some salt. I usually throw some Kosher salt and some chipotle powder(homemade) or cumin together. This cooks quick, so have all your other stuff ready to go.
Now, depending on if you cut it or not you will either lay down some perforated foil, or just throw the steak on the grate. After a couple minutes, sprinkle on some salt. Give it a minute or two, the flip and hit the other side. Cook to your liking.

Get that shit in the house, slice if not already done, throw it on a warm tortilla with whatever you like, and chow down. :wexican:
