OK I've read before that after you do a run of jars(pressure cook them) that you have to wait like 4 hours before you can take the jars out or wait till the pot has cooled. My question is why is this necessary? Why can't you just wait until all the steam is gone along with the pressure in the pot to take the jars out?

Extreme heat will kill the spores and/or break the glass jars due to the fast temp change if you take them out too soon. I usually just let it sit over night for the sake of the spores.

You can , and you should , if they are grains . You should shake your grain jars as soon as possible to redistribute the moisture .
You need to wait for them to cool down before inoculating .

Yeah I understand that but my reason I ask is that my pressure cooker can only hold 5 pint jars at a time. So I want to know if it would fine if I do a run wait untill all the steam and pressure is gone then take the jars out so I can do another run. But I wontn't inject the jars untill they are cool.

You can take them out when the steam has vented and the cooker can safely be opened. I typically wait 20-30 minutes and remove my jars for cooling on the counter top. When you're working with WBS or Rye, this is a must. You need to shake those jar before they cool or you'll have a hell of time breaking them up later.
Obviously you need to allow enough time for the jars to cool prior to inoculation regardless of where they're located.

Back in the day when I had a small pressure cooker I used to do this all the time. As soon as the cooker was safe to open and I would remove the sterilized jars, reload, and start all over again.

If you take the jars out too quickly, the rapid cooling effect can break your jars. I tried opening my small (6Q) Mirro too soon on my last run, and lost two pint jars to hypercooling.

Another note on PC usage . is when you begin you need to leave the stop cock off till you see a good amout of steam coming out before you bput the stop cock back on. this ensures you got a good head of steam. i think i read that in a paul stamets book.

be careful someone posted earlyer today about breaking jars and cutting there hand. My mom used to can foods when I was young. If I remeber right one trick she used was to have a large stock put full of hot hot water on hand. She would transfer jars from the PC into the hot water this kept them from cooling as fast. Still even doing this jars would ocashionaly break being taken out of the PC or crack in the water. Please be careful.
