Is this what you are talking about? Had to dig through some old posts for it. This is what I think of when you say sclerotia in a cube race. I have no idea what causes it either.

Is it possible that they were mushrooms starting to grow while you still had them in the jar? That would be my guess since you said it was fleshy.
