Need a vacation spot!

Hey all,
So my girl and I are looking for a vacationing spot from Jan 8-Jan 16. Here's what we have to work with:
Budget: ~$2000 Duration: ~1 week
So with these in mind, where would you go? Some place romantic please , but obviously not too expensive. Was thinking about Mexico, Caribbean, South America, Hawaii... Europe is a bit out of the picture due to the time constraint. Budget encompasses airfare, lodging, transportation, entertainment, and food (etc.) so not really too much to work with.
Anyways, thanks for the inputs in advance.

Dominican Republic - Cabarete, right outside Puerto Plata. I'm there right now. Cheap and awesome.

Stop thinking big, busy city and start thinking sleepy, out-of-the-way town with lots of charm, character, and antiques shops.
Micanopy, Florida fits the bill, and it's just south of Gainesville so if you absolutely have to get your big city fix, you can drive into town for dinner.

3) You can't have a certain plant in your possession or you'll get locked up with a rapist and a murderer.
4) We need a smaller, less-intrusive government.

Indeed, don't go to Oahu, but do come to Hawaii! Maui, Kauai and Lanai offer some super duper great hiking and camping experiences (I'd recommend Maui, but then I'm biased...). Flights are cheap if you look at the right time, and if you camp out, you avoid all the cost of staying at a resort (but you should stay at a resort the last night, she'd love that!).
Are you water people? Then I'd suggest Cozumel, you can dive the ruins!

Does Cozumel even exist anymore . The eye of that last hurricane went directly over it . I'd heard from some friends that it was pretty much destroyed .

dood , fuck it , go to Jamaica. i mean really what can you do... hmm you could go to cambodia ( notsure bout that airfare though ) but cambodia is great for hitchhiking around , just exploring , many great ruins , temples allow for you to stay with them and learn from them..then the parties in the city are insane..pound of weed = 50 american dollars.. ( and old women are the ones who sell it usually haha ) ...food = 20 a day for 2 people , taxis are cheaper than dirt ( literally ) its a great place , look into it.

A couple prices I just looked up:
7 Day Southern Caribbean from $599
Ship: Carnival Destiny Sailing from: San Juan, Puerto Rico on 01/08/2006 Itinerary: San Juan, Puerto Rico; St. Thomas, USVI; Dominica; Barbados; Aruba; San Juan, Puerto Rico
8 Day Eastern Caribbean from $929
Ship: Carnival Liberty Sailing from: Fort Lauderdale, FL on 01/07/2006 Itinerary: Ft Lauderdale (Pt Evrglds), FL; San Juan, Puerto Rico; St. Thomas, USVI; Antigua; Tortola, BVI; Nassau, Bahamas; Ft Lauderdale (Pt Evrglds), FL
7 Day Western Caribbean from $1,129
Ship: Carnival Conquest Sailing from: Galveston, TX on 01/08/2006 Itinerary: Galveston, TX; Montego Bay, Jamaica; Grand Cayman, Cayman Islands; Cozumel, Mexico; Galveston, TX
-------------------- m00nshine is currently vacationing in Maui. Rumor has it he got rolled by drunken natives and is currently prostituting himself in order to pay for airfare back to the mainland but he's having trouble juggling a hairon addiction. He won't be back for a long while.
