still having water spots
    #504149 - 12/29/01 03:04 PM (22 years, 2 months ago)

my friend is using bags and pcooks at 20-25 psi for 2 hrs. The rye is prepared by boiling until it becomes nice and plump. After they are innoculated they always seem to start out nice but then they get these huge wet spots after a few days. I figured this is a bacterial contam but is it caused by too much water in the rye or does it just need to be pcooked longer?

Hey,
You are double boiling your rye.....this is a sure bet for failure.I've done it before and it ended with failure.Do not pre-boil your grain you are over saturating it.

DurbanPoision what your actually doing is just fine. But spend the extra money and put some vermiculite at the bottom of your bag when you pressure cook. Works wonders, believe me. I really prefer cooking it first before sterilizing, cuz after a while you get the feel of the right tenderness/ water ratio.
Another thing i recommend is actually rinsing off your grain before pc'ing. It gets off the gunk and other shit so when you shake it doesn't clump as much. After all isn't that the reason why you switched to rye?
