step to Identify

I live in Northern Arizona and we have a lot of cows in the woods in the summer and I find mushrooms growing out of the patties. I have eaten some picked around here about 10 years ago but wasn't paying any attention to what was being picked. I have gleaned enough info from this site to look for blueing and to look for a purple-black sporeprint but what do I look for when I split the stem? Is it sopposed to be hollow? Are the gills supposed to be attached to the stem? Can someone tell me the basic steps and what to look for are? We have snow on the ground right now but I want to start learning how now.

The best thing would be buying Stamets book but you can start by looking at mj site http://mjshroomer.yage.net/species.html. Anyway, it all depends on what specie you're looking for.
