harvesting mature w/out...

How can I go about picking a mature mushroom without pullling or damaging the younger specimens? my shrooms are growing in clumps or 10 to 20! If i pull it it will pull out the younger ones, and if i cut it out wont the end of the stem rot?

Cut or wait for the others to mature. You won't ruin everything if you cut.
