I just found aout 3 days ago about the containiments in my casings(the mean old mr. grinch)green mold. I threw um out cause i was pissed. I don't have any trouble colonizing cakes but the last 2 times my casings fucked up. What is the most realiable way for casing that doesn't get mold very fast because the conditions around here tend to get mold fast He's a chainsmoking alcoholic sociopath...

There are several things you can do. First and foremost are to make sure you are ultra sterile. That means clean yourself, your casing containers, wear gloves and a mask whenever you deal with your casings, use a little lime when you make your casing, sterilize your misting water, make sure the room air is not moving or use a flow hood, and just be paranoid about sterility. I typically use diluted bleach to wash everything out and then use "simple green" to further wash things out then I use just soap to wash things. Then I use an antibacterial jel to clean my hands, grab some gloves and use the gel to wash the gloves. I wear a hat and a face mask. I don't get contams unless it came from the jars but even those I clean as I just mentioned. Good luck.

damn. after taking cakes from the jars i rinse them out with tap water and store under my friends bed. then i just fill them up again and sterilize. im just moving into casings though. i think its just a matter of using your head when it comes to what youre doing.
-------------------- Holy shit people; COMMON SENSE! we were all born with it where did it go? maybe theres a tek out there to explain how to use it! BUCKETS BRIGADE left hand man!!!

Use a little H202 (hydrogen peroxide) in everything. About 7% of what you buy in the store with distilled water. I use that in just about everything and it works great.
