deep scratchin'

Looked around, maybe not hard enough, but could someone explain deep scratching? I hope it is a remedy to my problem of pinning only along the sides of my cakes, because the top has hardened and has soil some soil has stuck to it. Would scraping deeply (if thats what deep scratching means) into the cake on the top allow some growth from the very top? Thanks for your help to all the mushmasters worldwide. papa

Casings will pin where the mycelia can get air. So, yes, I'd say deep scratch. I use a knife and make XXXXX patterns across the surface right down to the mycelia. Also a good time to fill in any gaps around the edges of your casing.

how does this work for cakes, i read the voodoo tek, but i dont have a drill, could i just make slits with a knife, what about taking a fork, sticking it in there and turning until that part isnt really cake form anymore?
