Why use flour?

Sorry for crowding the board. I just wanted to know why people use brown rice and rye flour for cakes instead of just using whole grain rye. or rice. Once its all colonized it will stick together just the same. Whats the secret?

Whole grain needs pressure cooking to get sterile while flour/vermiculite/water mixture can be sterilized in a pot(still, a pressure cooker is recomended).

my lazy wookie friend always used whole rice/verm/water without pressure cooking... (regular cooking/baking or microwave...)
its weird because he already tried with flour and it always got contamined... (he had not tried pc for flour tho)
