Generally temps tend to be higher in the middle, one reason why they might not fruit in the middle. Another reason may be that it is slightly drier around the outside, and maybe that strain likes it just a little bit drier. But these effects also occur outdoors in prepared mushroom beds and in nature...pretty normal I would think...just my two cents.

Your casing layer is likely matted. The shrooms will grow where they can get air.

Yes your casing could be matted and have "overlay".
Do a search for "deep scratching" and read some of the threads, then make your decision whether you want to go that way or not.
Me personally? I have had some sucess with this tek, sometimes not.

I do it by colonizing quart jars. Takes a little longer but I get an amazing quantity of substrate.
