PC Question

Out of curiosity, this is the first time Ive used a regular PC before. It has a little metal thing in the bottom to keep the jars from touching. Do I fill the water up to near the top of the jars, or will it work if I simply fill it to the bottoms of the jars?

The metal thing is to keep the water from bouncing the jars off the bottom of the PC and breaking them. You can fill the PC with about an inch of water without creating a problem. Also try waiting more than an hour for a response.

I assume your PC is a weight regulated type?
They lose stream, as it vents out from beneath the regulator weight.
The rack in the bottom is - so the content does not come in direct contact with the bottom of the PC. Use the rack. It prevents the botton of the PC content, from overheating.
Run a test on your PC. Put some water in it. Say an inch of water. Run the PC & see how long that inch of water lasts. If it lasts 60 minutes. You are good to go.
If it doesnt, add more & test again.
There is no pat answer to your question, as there are hundreds of types & sizes of PC's. XXX amount of water in 1, doesn't last as long - as in another.

yes, but if I only fill it to the bottoms of the jars, is the cook still effective?

For shure you don't need to fill your PC with water untill near the top of the jars.
It all depends on what you want to sterilize actually, (=how much time you are going to cook your stuff)
If its PF cakes then you prolly wanna cook them for 45minutes to an hour at 15 PSI and that would require something between 5 and 10 cm of water in the Pressure cooker depending on your Pressure cooker i guess,
You got to experiment a bit, there is no such thing as a perfect answer to this , just remember to keep the heat low ,just enough for the pressure inside the pc to be 15 15 psi
The drip test helps, (=when a drop of water reaches the metal lid of your pc when in correct pressure, it should evaporate INSTANTLY, like boiling rapidly)Thats when you start counting sterilization time
Hope this helps, but BE CAREFULL, maybe run a few test cookings just with water to see how much will get lost from the process and then try with jars
You could do a 1/2 hour test and see how much water was needed or something
Good luck

What sterilizes is HEAT, STEAM & PRESSURE. So long as enough water remains to create steam - under pressure, for the desired period - of time. YOU ARE GOOD TO GO

Water acts in there just like a steam reservoir. You just have to not let it end before your sterilization time ends, and not use too much in case it splashes inside the top of your jars.

Try WBS - next time. It is more forgiving the P-corn, IMHO.
