Picking Time?

Ok, I have a little problamo. I have some cakes in my terr., but on a couple of the cakes I have numerous shrooms that are already like 4 tall and almost formed completely at the top. When should I pick them? And should I cut them at the base or rip em off? Please respond if you have any suggestions. Thx in advance

If you twist and pull your liable to pull off some mycelia/substrate with your fruit if your growing tenacious cubies - i always cut from the base and then cover the area with fresh casing...never had an issue with that method
