Depends on how many jars/bags you're trying to sterilize...Buy what you think will be most economical for you.

If money is no issue buy the biggest one you can find. I had a 20 quart PC and wished I had a bigger one. Or if you want to go all out buy a PC designed for Shrooms cultivation. Go visit Paul Stamets site. He has the best PC's.........Very expensive you can spend several hundred dollars.

In the long run, BIGGER is FAR BETTER. So is QUALITY.
An AA 921, or 925 is ONE FINE PC. AA 941 pictured above.

No doubt. I figured 15qt would do it for me. You can only PC 7 qt jars in it at a time MAX.
On an old stove, it takes 30 minutes for me to get to pressure. One hour of PC, one hour of cool down. 30 minutes to pressure etc...
It takes me roughly 5 hours to do 14 jars. Sure I can knock it down to 3 or so. But lets be honest, I am busy while these things are cooking and I am not there as soon as the timer goes off to switch the load. Ten minutes here and ten minutes there adds up you know?
My point is that the difference between say a 22qt PC and a 15qt PC can be the difference of a few hours of pressure cooking, or a few days.
BTW, as mentioned - an all american (AA) Pc is the way to go. Thats the first PC I bought, and it is still my favorite despite it's size. I don't take care of it like I should, and it still treats me like a god.
