wow geo, great photo! post more of your food photos they're always awesome
i toasted the bread in the oven but didn't toaste it enough so it's crispy..still chewy a bit, tiny bit of crisp.
the cheese i used is the closest thing i could find that's similar to provolone, it's a finnish cheese called aamupula...actually it really tasted nice!

Can't wait to see your pasta from the ground up Gabba - I've been meaning to give that a shot, but there are so many ready-made pastas (both dry and fresh) in the local market that lazyness usually overcomes my abition to create the noodles.. however I do like making sauces
To oblige boO, here's a rundown from last night's meal thrown together on a whim with the shit that I had leftover in my fridge. I took my first bite and was like "Damn, this is good" - so that's when I decided to snap the picture, hence the half eaten fish fillet
- Van De Kamp's Battered Frozen Fish Fillets:
Slaved over my marijuana smoke as these babies did their thing in the oven - YUM
- Garlic Mashed Potatoes:
Mashed Potatoes (boiled first then mashed) Buttermilk Butter Minced Garlic Salt & Peppa Stovetop warming Top with Cheddar Cheese
- Corn a la Geo:
Sweet White Corn Chopped Shittake Mushrooms Diced Sweet Onion Red Bell Pepper Jalapeno Pepper Salt & Peppa
--> Fry dem onions/mushies/peppers in some oil, add corn to warm and flavor with salt and pepper as desired
- Spicy Stuffed Mushrooms:
Medium/large Shittake Mushrooms
--> stem carved out and stuffed with fresh homemade salsa, a bit of the garlic mashed potato, topped with a thick slice of extra sharp 2 year aged cheddar cheese (bi0tek would be pleased, I'm using non-dyed cheese on these ), and topped with a liberal helping of cayenne pepper powder. Baked in the oven with the fish fillets @ 425? for ~ 18 minutes on an oiled pan.
- Top it all with green onion, dip the fish in tartar sauce and douse with Tapatio (hot sauce) as desired.
- For the Homemade Salsa, I used:
Tomatos Sweet Onion Fresh Jalapeno Cilantro Garlic Salt & Peppa Fresh Lime
--> Chop finely all ingredients, mix, add a bit of e.v. olive oil if desired. I blend about 30% of the salsa to make a liquified base flavor, then add in more coarsely chopped veggies for texture on top of that. Let it sit for 30 minutes or more to really get the flavors juicin'
Put it all together and you end up with something like this:

Just got a BBQ up on my deck last week too! We'll have to get nice 'n stoned and see who can eat the longest without passing out

Here is just some casserole dish much like enchilada's.
All the veggies I had on hand, and the shell's I used
I had a 32Oz sirloin steak sitting in the fridge with a bit of seasoning salt overnight, which I seared nicely on both sides
Next I added about 2 cups of salsa and 1 tin of beef broth, covered the pan with foil, and in the oven at 200 for 1 hour. Meanwhile I fried the onion's and then later veggies.
The sauce was 1 4Oz can of generic tomatoe sauce, the cherry tomatoes crushed up, and 1 pint of homemade tomato juice from my parents farm. and some basil, garlic, onions, and a few shot's of franks.
I then took the steak out of the oven, sliced it nice and thin across the grain and mixed with the veggies. I layered my casserole dish with some shells, then layered the meat + veggies, then ground up cheese + sauce. I repeated until I hit the top of the dish.
I put the dish back in the oven at 300 (c) for another 30 min. This gets the water out of the shells and the cheese gets all bubbly on top.

Yum.. that looks good - and not that it matters since ya did all that baking and rebaking with the juicyness.. but generally you'd want to hold off on salting your meat until just before cooktime since the salt can draw out the moisture and make the meat dry if you were just grilling it to eat. On that note, your damn pictures have my stomach growling, so maybe I can help make someone else's growl too with these uber nachos I made last night:
- Mission Tortilla Chips (Guacamole powder flavor, hence the green)
- Monterey Jack and Cheddar Cheeses
- Refried beans with plenty o' Lard
- Tapatio Hot Sauce
- Homemade Salsa (recipe in my above post)
Center refried beans on serving dish, top liberally with Tapatio hot sauce, and bake for a half hour at around 250 - 300?F to make a solid little bean-cake in the middle of the plate. After the beans are nice and hot, like a little pile of crap covered with blood, bring 'em outta the oven and strategically place tortilla chips around the beans. Sprinkle a handful of cheeses atop it all, and pop back in the oven at 250?F for about 5 - 8 minutes (watch the chips so they don't burn, but don't crank it full blast to melt the cheese, cause then it loses some of its ooey-gooey-ness, patience is key!).
Top that mother with a liberal helping of the homemade salsa, pop open a brewski, and stuff yo' mug!

hey boo
i gave the adobo a test run tonight before my invitation to tommorrow's big test.
It turned out incedibly delicious I must say.
The meat was very tender, although it was just slightly on the dry side once I got into it, although it was still very enjoyable so I don't know why i'm complaining.
THe sauce came out pretty strong but it was my fault because i added more soy sauce/vinegar than water. THe onions got deliciously soft, as you predicted.
My only question now is, is there any way I can keep the chicken meat to be a little more on the moist side? I mean seriously, it is fine the way it is, but I just had to ask.

Try cooking at a lower temperature, like a braise. Throw the lid on there and let it barely bubble for the good 40 minutes. soochi [up there] also posted some great ideas
