food photos
    #4826026 - 10/19/05 04:37 PM (18 years, 5 months ago)

well...i wish i had taken some photos during the process of preparing, but bleh, i never thought about documenting it to post on this forum. well, hopefully next time i cook something new then i'll take photos...i guess wait till this saturday when i make some chocolate lava cakes!

anyways, here are some photos below of stuff i've made in the past week:

palitaw, a glutinous rice dessert that filipinos eat...coated with grated coconut (took me 2 bloody hours to grate a coconut with a cheese grater), sugar and toasted sesame seeds

no one seemed to like them :frown: partly cause the texture is a bit different...as my husband said it's like "snot" texture...guess it gets some getting used to. anyways if anyone wants to try the recipe, i'll be glad to post it

i also made some dumplings the same day...from scratch...filled with chicken, scallions, green onion, ginger and some mushrooms. tasted really nice with a hoi sin + soy sauce dip

photo of them cooking in the frying pan

growing up in so cal and having a vietnamese brother in law, i was really blessed to be able to try different vietnamese fast food. i was feeling a bit in teh mood for bahn mi, french bread sandwiches with bbq pork. the marinate is great for the pork and it's really simple to make and the topping is cilantro,  carrot + daikon raddish pickles, cucumber...the bread spread with duck liver pate and butter. very simple and yummy to make...

and of course cause i live in the middle of buttfuck no where...there's mushrooms all over the forrest! this photo was taken a few weeks ago when i got a good haul of cantharellus tubaeformis...made a simple sauce with cream, butter, salt and pepper. tasted nice on the side with potatoes and pork filet.

(ok so this is one photo i took when i was cooking )

and of course another variety of filipino dishes, adobo ng manok (chicken), lumpia (shanghai style - pork mince filler), pancit (the noodles) and i forgot what the name of hte red dish is with the pork and potatoes.. :frown:

i guess i'll leave u with some wild strawberries which were picked and put on a piece of hay

No more...will...to live.

Seriously though, 2 hours to grate coconut?  That's dedication.  They make special tools for that(if you don't already know).  If you ever end up at an Indian store, they'll probably have them.
Here's a link

And those sandwiches sound excellent.  What's in the pork marinade?

gabba: i'm not sure what brand dumpling wrappers i used...there's only one asian store in this whole city and not much carried in the frozen section unfortunately :frown:

next time i make a batch though i'll be rolling my own dumpling dough

l_s: yeah it's cause their whiteys...to put it bluntly didn't want to offend any caucasians in here

daimyo: great marinade..really suggest it. here's the details

Nuoc Cham (Vietnamese dipping sauce + marinate)

Makes 3/4 cup, enough for 500 grams of pork

1 clove garlic
1/2 teaspoon ground chile paste
1 bird pepper, seeded (optional)
2 tablespoons fish sauce (see note)
1 tablespoon fresh lime juice with pulp
1/3 cup hot water
2 tablespoons sugar

Put the garlic, chile paste, and optional bird pepper into a mortar or food processor and pulverize this into a paste. Combine this mixture with the rest of the ingredients in a small bowl and stir until the sugar has dissolved.

oh yeah and i used to watch my grandma grate coconut by using that stool with a serrated blade at the end...unfortunately asian markets here don't carry any coconut grating materials (really bare asian markets might i add - not the same back home in the states)

thanks for the link i think i'll buy the handheld grater!

I thought of that as referring to fast food joints myself.

Where's your spicy recipes at LS? I know you're holding out.

it is considered vietnamese fast food...making sandwiches don't take a great deal of a long time...you can also pick up ready made desserts like warm fresh tofu (taho) in ginger sauce, red bean "soup" with coconut cream, french pastries and baked goods at the same place. also i suppose since there are a couple or maybe a few now of the same chain of sandwich stores in little saigon it can be considered a "fast food joint."

i don't know the name of the place afoaf, but you can find places that sell bahn mi in little saigon in oc. i just made one type of bahn mi, but usually they contain fresh jalapenos (which unfortunately i can't get here), different sorts of pates, cold cuts, cheeses etc.

the reigional food is nothing to write home about in my opinion, it's typically nordic food i.e. meatballs with lingonberry sauce and new potatoes, smoked salmon, etc etc...

we do get reindeer meat at the supermarkets here but i haven't bought any myself yet...maybe i will one of these days and make reindeer stroganoff...

but here's a photo of a smoker

there's different types of wood for smoking next to the smoker, i.e. alder...inside the smoker was some freshly caught salmon, pike and flouder...the best smoked fish i've ever tried was flounder it is so friggin yummy!

more photos!!

for tonight's dinner, although i had planned on making char siu pork, i ended up making a filipino dish called adobo ng manok (manok = chicken) since it was quicker. turned out just right, if anyone wants to try it, i recommend it since it's quite easy and just requires vinegar, soy sauce, minced garlic and meat. I added onions and potatoes in there though, in some parts of the philippines they do this but cause my husband's a whiteboy he requested for potatoes.

adobo cooking

my plate

i made this chocolate cake saturday

and yesterday's dessert i ended up making panna cotta. i didn't use a vanilla bean like instructed, instead used vanilla extract. again if anyone's interested in the recipe, i'll post it

panna cotta just finished boiling...used coffeemugs as custard cups

the end result with caramel sauce (unfortunately blurry photo)

tasty! that looks like the surinam chicken I can make, which is awesome. I bet you'll like it, it's really not hard to make either although it requires some more ingredients. I'll post it sometime soon if I remember
