Pesto Ponderings

I love pesto.

There's a produce market in Philly that sells freshly harvested basil along with asian pine nuts.

I use the basic recipe, parmesian, salt, pepper, olive oil, a tablespoon of lemon juice...

I end up making quite a large batch of pesto sauce and i keep it in my fridge, use it on lasagnas, pizza's and of course pasta.

The basic pesto pasta for me is some penne or linguini, with sauteed chicken breast slices or ground beef, or rock shrimp.

I've also used Giada Delorentis' recipes for Mushroom pesto (replacing the basil with porccinis and white button mushrooms) and sun-dried tomato pesto. Both were pretty good, although the mushroom pesto was probably superior.

Do any of you have any other good pesto recipes you could share?

Also, how long would pesto sauce stay good in the fridge?

What else do you use pesto on?

just keep it with a layer of oil in the fridge and it should last for at least a couple of weeks. I crush a half tablet of vitamin c when i make mine to retain the green color. I also love making pesto with other herbs, like cilantro and macadamia nuts or mint and walnuts (excellent with grilled lamb). I also like to use the oil in sauteing chicken or fish, gives it a really nice flavor.
