Its been a week now and Im just wanting to make sure im doing things right.

I birthed my cakes last Friday dunked n rolled and put them in a fruiting chamber on Saturday. The temperature is about 76-78 deg. I introduced them to about 12/12 light last Saturday and fan and spray about 3 times a day. There is a white fuzz that grew over the vermiculite almost like a small soap bubbles but there white. Its been a week now should I be seeing pins. Also there is a slight smell from them I cant really describe it, its not horrible but is this normal?

They sound normal. If you drop that temp about 5-6 degrees lower and fan about 20 times a days you'll be just fine.

Is it normal not to see pins yet? the cakes were fully colonized and birthed a week ago?

You probably would have some by now if you had the temp lower and had fanned more.
