1/4 of my test cakes have fully colonized. 3/4 are stalling, the hawaiian looks like it's gonna get there by tomarrow though, but the rest are having trouble getting across the bottom. I'm not sure if it's lack of water because droplets have started forming inside of the jars, could it be air exchange? my inoc holes are not covered and i turn the jars over once every 24 hours. Any ideas?

nah. its probably just that. droplets arent really a good sign but dont worry just yet. it might slow the myc down a little but it will probably pull through.

yep i learned my lesson, the tape i got didn't stop water from getting through during the PC process (that's my theory and i'm sticking to it). But now i have Tyvek (thanks US postal service for 500 envelopes). and i'll use tinfoil next time. Maybe i'll make some more jars tonight.. but i really wanted to wait till i had quart sized jars for my birdseed.. ho-hum

Foil the way to go. I sometimes use the self adhesive flaps of the tyvek envelopes to caver the holes during PCing (with foil covering). I've seen nearly completely colonized jars produce water droplets before. Nothing to worry about.

What temperature are you incubating them at? What strains are you using relative to the degree of colonization you're seeing? Are you exposing them to light?
(And yes, condensation is perfectly normal.)

If you're using PF jars, you can flip the jars to push out the excess CO2 and encourage air exchange. If you're using grain, you can shake up the jars to spread the myc around.

hawaiian, african, south american, and B+. African started strong but seems to be having the most trouble colonizing the bottom, south american was slow but spead up and is now having the same problem as african. B+ started slow but sped up and finished colonizing first and hawaiian started slow and then sped up and should be done by tomarrow i believe. I have not been exposing them to sunlight only light they see is from a lamp when i check them. They are incubated at around 80-88, the temp fluctuates because the underwater heater is shitty and i have to unplug and plug it in as it heats up/cools down.
