To birth or not to birth

Heyaz I have some cakes that look about ready to birth... one of them especially.. It appears to have all kinds of riz growth, which looks very nice.. it's covered in mycelium... a couple of concerns though... I notice at the top of the jar, just under the verm layer, the mycelium is not very thick, it's about 1/4 " at the top thats kinda sparse.. does this mean I should let it colonize longer? and I also note in this one particular jar that there appear to be little white knots forming on the sides in some places.. a bunch of small ones, and one big one about 1/4" in radius... will these become pins? should I birth before they do? please help! :)

when I see the pins, and birth the cake.. I'd like to make SOS casings.. should I remove the pins before doing so, or leave them? Thanks for the advice btw puscle, it's much appreciated.

actually.. they are very close.. my original post mentioned how the cakes are slightly less colonized near the top of the jars... I was curious what this means..

if you used a top dry verm layer to isolate any contams it's more than obvious that the top is not colonized, and it never will be.

thanks for the input lemming... but as I said above the top of the CAKE is not colonized fully... not the bottom of the SEAL.. :-)

One last question... when they are ready, very soon... if they have pins, should I remove these before casing?
