for me it boils down to how i plan to rehydrate. if i'm going to be misting a casing layer then i'd use peat. but as y'all know i'm pretty lazy and often stoned so i generally opt for dunking to rehydrate and in that case coir is, in my opinion, better precisely because it does overlay tying the mycellia block together like a cake and as we all know, overlay doesn't stop fruiting as any pf cake can prove. so a few extra nutes is ok by me anyway i did not see any carbs or starches or sugars on that list, just minerals. i daresay even peat contains minerals, everything does.

I hear you on the usage part hippie, but not necessarily the analysis of the nutrition. (particularly the lack of carbs starches and sugars) I think the list was subjective and aimed at an analysis of minerals that plants use rather than analysis of fungal foodstuffs. We all know that plant matter is not made out of minerals alone...
But you are right, if you actually want overlay, coir will definitely perform. And it also does rehydrate via soak pretty well even when overlaid. (as you said to me elsewhere recently, "good to see you around"!)

I just looked at my profile and realized I had a website at one point in time on geocities, it's not there anymore and I have no idea what I had on it. Anybody remember my website from several years aga? PM if so please.

anyone know then, the breakdown for coir in terms of actual food, i.e. starches, carbs, sugars, etc. ?

I know this thread is old but there is something interesting buried in all those numbers no one seems to have noticed.
The calcium has increased, pretty significantly @ 4x.
Potassium, which largely affects pH, driving it up much more than sodium, then more than magnesium, lastly the least effecting, is calcium in that order.
So the pH went up, but both sodium and potassium went down significantly.
Many micronutrients went up as well. These were likely tied up at those lower pH levels. The particular type of extractant may not have been able to "see" them as they were not soluble.
I mean, Zinc, 11X more... Copper... 11x more... Iron also 2x...
All the solubles that normally can be flushed out by higher calcium in overages like boron and chloride, sodium, and potassium... all went down.
This stuff probably would work better at these rates for mushrooms... lots more is available even if the mushrooms can use enzyme factors to digest things.

I totally agree with you but before a mod comes on and yells at you the shroomery frowns upon resurrection of old threads. To avoid confusion its best to start a new thread and add the links from the old threads to your opening post to show what information you're referring to.
