Yest another harvesting question.

This may sound crazy but I would much rather eat my little darlings fresh than dry. I have a couple of cakes that started pinning two days ago. The little fruits get bigger each day. My question is how long after they mature can I wait to harvest them? I have a Damp-Rid setup and it works fine, but I'd rather wait a few days and eat them fresh. I know they may drop their spores, I actually had that happen on my first flush.

Once they open the caps harvest them.

when they are growing there caps are just a ball on the stem. when the mature the ball wil start to pull away from the stem. there is a veil (like a thin sheet of paper) that connects the cap to the stem. whem that starts to break you can pick them. after that piont they don't get any more potency but increase in size.

How so you know that? Have you compared the strenght of the shrooms from the same strain isolate picked right after the veil brakes to shrooms picked when the cap flattens out?

Thanks for the responses, but let me clarify - I know that the fruits can be harvested after the veil tears or after the cap opens. What I want to know is how long can I wait after that before I risk rotting or contamination?

i not very knowlage about this. i thought the potency was a by product of a chemical that was produce by the mushroom as protection for it while it grows to produce spores. once it hit maturity it uses its energy to produce and distribut its spores. makeing them increase in size but not in potency. thats why i thought they say to pick them smaller because there is more potency per size.
But I am not sure, if i'm wrong i am sorry for the mis info.
