pressure cooker question

okay i just pc'ed 3 pint jars of corn. then i put another 3 in to pc except this time i forgot about them while they were pcing and after i turned it off and cooled it. i opened it and there was no water left. the jars look fine. i had the timer set for an 1hour 15minutes. that was at like 9:55p.m. its now 11:30. so it was only an extra 20 minutes. are the 3 jars still good ? do you think maybe the corn might have dried out? i also, had a 1/4 inch layer of verm on the bottoms in the jars maybe that helps.

anyone know what happens if you over pressure cooked 3 pint jars of corn with a layer 1/4 inch of verm as a bottom layer. i over cooked for 20minutes using a 4.2 quart pc . when i opened the pc there was no water left.

id say your ok. knock em up and see what happens... letting the canner run dry may have dried out your jarsa bit , but you'll probably be ok.

i just looked at em again and i can see moisture in the jar just looks like the kernels kinda shrank

I did the same thing a while back. My cakes/casings fruited perfectly. Just make sure to read the PC operating procedures. I was PCing mine at too high of a temp and wound up steaming out all the water. I also put a bit more water in. I bought a cheap PC from walmart, so I expect it doesn't work as well as a good old American or other high $ PC.

thanks. i think i have the same one as you cause i got mine at walmart as well. so your jars turned out after the same incident. thanks for the reply i was worried

Yeah, they were fine. Just add a bit more water and PC at a little lower temp and you'll be fine next time.
