are you adding water in the pressure cooker with the jars? i know seems like a silly question but i'll bet it has happened more than once.

when you are sterilizing, do you turn the temp down after it starts coming out of the rocker/pressure valve? you should, you just want the rocker to be jiggling after it reaches temp and pressure. otherwise your pc can run out of water rather quickly and then suck the moisture right out of your jars.
:peace:

you're running your pressure cooker on too high of a heat. If you see a lot of steam escaping during the beginning you're heating it up too quickly. Start off with the stove on low, move up to med after 5 min, med high after 5 more min, then let it sit on high for about 5-10 minutes until it reaches 15 psi. Then lower the heat a bit and you should be ok.
