Water leaked into my PF jars - Help!
    #4700031 - 09/23/05 12:24 PM (11 years, 1 month ago)

I sterilized some PF jars for the first time last night. The problem is that some excess water has leaked into the jars, not a lot but I still don't want to risk failure by going ahead so I'm going to start again. I figured that the water leakage could be for two reasons.

1) In the PF tek it says to leave the jar seals loose so that steam can penetrate the jars quickly, but then later on it says that you don't want to disturb the water balance in the jars as it will set up failure, which I guess is what the foil covering is for. I was a bit confused by this so I just screwed the jars on (using jam jars so no seals) not too loose nor tight. Could it be that the lids weren't tight enough?

2) I used saran wrap rather than foil, which was a bit stupid I have to admit and could easily be the cause of the problem. I still can't rule out water leaking through the lids not being tight enough though.

Any advice will be much appreciated, with some good replies hopefully I can start again tonight

If you put too much water in it will bubble up the sides of the jars and works its way into them. When I did the PF tek I always screwed on tight. The steaming water will not go past 100C so the water in the jar will not either, so any buld up of pressure would be minute.

How do you know water leaked into the jars and what compelled you to use saran wrap instead of foil?
