Mycelium... maybe?

So.. I have begun to dabble in growing some mushies, and all is going well. When I was filling jars with the vermiculite/brown rf mixture and then sterilizing them, I had a few left over jars, which I did fill with substrate, but did not sterilize. So... I threw them in a drawer and forgot about them. Three weeks later, I open the drawer and take a look... two of the three jars in the drawer look like death.. white and green and black and orange splotches all over the substrate... but the third.. well.. it's all white.. just like the jars which WERE innoculated.. but this one was not, and was not sterilized either... My question... what the hell is in that jar? does anyone have a clue?

Cobweb mold will be noticable grey. Perhaps you should give it a smell test.

It is utterly white.. no other colors present what so ever. What are the details of the "smell test".. I wouldn't know how to identify what the smell is like..

everybody tells me that cobweb is grey or greyish. i do not know why but all my mold is always bright white and stringy. and yes i am sure its mold cos it smells like ass and colonized my casing about 1/2" ABOVE the casing layer in like 3 days.
