I believe the 'candied almondes' you speak of are basicly just roast almonds , slightly salted , and rolled in Butter Carmel / Honey syrup , I make honey butter ( 1:6 or there abouts , Honey to butter ) its just melted into one another, if its heated for too long, it crystalizes, and tastes alot like thoes candies , I would think sugar would be used though for most candy ... On topic of candy, I will state a interesting little one I make for my family when the seeds are ripe, yeah I am serious ... We have Pigweed Amaranth here, alot of it, it takes over my gardens 'Amaranthus palmeri' . This is geting off topic but oh well thought you folks might like to know ... When the flower spikes of these go from green to a slightly tan color, like they are drying out , I cut them off and put them in a bowl, and take them into kitchen , through a wire strainer ( like used for cooking , just a normal wire mesh ) I rub these flower spikes between my hands untill they start to fall apart, they shed MASSIVE amounts of small glassy black seeds, that really do look alot like large fleas ... Using this method, I can provide myself enough of these seeds to fill up a 8oz measuring cup , 20-30 minutes or so, they produce alot of seeds, they are edible , to my knowledge most if not all amaranth seeds are edible and are considered quite healthy, but are mostly ' famine' food the world over , well now to the candy, you take these glassy black seeds , and put them in a steel frying pan , on medium heat , leave on for about 30-40 seconds longer , as far as I can say, as it takes for the pan to get to a heat that if you even brush the side , it hurts ... yeah thats acurate ... then mix in honey, enough to coat the seeds , my guess is about 1:1 honey : seeds, or maybe 2:1 honey seeds, basicly just mix this up really well, and heat on a low heat for a period of time watching it VERY closely ( when it gets to crystalizing it does it fast ) keep stiring, when this stuff gets really thick an viscus , like melted plastic , scrap it up into a crude ball quickly and remove from heat ASAP , I roll these into small marble size balls when they get cool enough to handle , this leaves a mess on the hands BTW , then when rolled into balls, put on a glass plate in fridge, and there you go , when you eat these, they just sort of crumble , the crystals fall apart, and I cant eat alot of candies, chocolate especialy causes pain, as a result of bad teeth , but this basicly just crumbles and gets washed down with saliva, dosent stick to teeth, and is so very good ! Candy made from garden weeds ... Also these are pretty if they are smooth when cooled, they have a glassy black appearance , like gemstones , and what ever is left over in pan or on the spoon or knife, scrape it off , it will crumble into little granduals, and push together , this tasets the same, and also looks pretty ... yeah I know, making candy from pigweed ... But it tastes very good . and aside from honey and $ to use a stove / frying pan , its free ! with a little time spent, babble babble babble, this is tranceharper saying ... DONT EAT LEMONS/LIMES raw, they really do eat away your teeth ... I miss chocolate - Tranceharper OH PS :Forgot this part :: How to clean / chaff amaranth , basicly just sift the seeds through the wire mesh over and over til all the large chaff is gone, what is left, place on a large glass plate with slightly raised edges ( a dinner plate basicly ) take outside, and blow gently , the chaff blows off when you blow, the seeds do not, you can basicly remove all of the chaff this way. works good - Trance

I used to eat candy all the time. Now I don't, anymore, ever... It's too sweet, bad for you and your teeth.Only candy I will eat are chocolate bars.. little japanese men walk around the city selling bars out of a cart with nuts and sodas and chips with your choclate. Don't get me wrong me and friends used to drop 10 fire-warheads and see who could hold out the longest..... talk about total tastebud atom bomb

I am not much for sweets myself, not by themselves, honeybutter is a condiment, and I like various sweet things to drink ' read as , I will drink a gallon of what ever fruit juice happens to be in fridge , in a few hours ' of all the candy that hurts most, chocolate is something I have had to forgo , my favorite was byfar dark chocolate ... -trance

Nah, no real sweet tooth for me. I do enjoy good candy though.
More of a carnivorous appetite for me.
