Blue dots on my cakes
    #4691530 - 09/21/05 08:14 PM (11 years, 4 months ago)

Just transferd my cakes to a white rabit style fruting chamber and now have blue stuff on some of the cakes? is this a contamination or is it something to do with oxygen depletion?
Thanks for your help,
Low freq

pics would help, as someone else will surely say, but it could either be bruising of the cake from handling, or it could be contams...leave it to the pros though.

Just take a q-tip and get it wet, wipe the area in question GENTLY and if the q-tip gets blue/green on them then that is the spores from contams. If nothing is on the q-tip then it is fine and just bruising. I am willing to bet that it is most likely 100% Bruising. No worries.
