I was under the impression you need to dunk then cold shock it afterwards or both at the same time. I personally don't dunk since its risky business, but ofcourse its personal preference.

all dunked, none cold shocked. cold shocking cubes will just stall the myc and delay pinning.

and no, dunking is not risky business...it is done by a lot of people and really helps yields and moisture of the cake.  fully colonized cakes are not very prone to contams when being dunked.

dunking is great for cakes. i don't cold shock though, because the very smart folks around here told me it will stall the cake and really isn't necessary. i just dunk in cold water and leave it at room temperature for 18-24 hours. i roll in verm too, and my cake loves me for it
good luck!

you don't really need a guide...it is fairly simple.

1.birth your cake
2.completely submerge the cake in water for 12-24 hours (12 is fine).
3.roll the cake in dry verm and lightly mist the cake to make sure the verm sticks.
4.put cake in fruiting chamber.
