I failed to cook that chicken

FAILED!

Why do I suck at cooking meat in large pieces? I can make a good soup. I can handle little pieces of raw meat, but a big piece, god damn. I am bad. A chicken breast, in oil, in a pan, is my enemy. It never cooks right. Any tips? What heat should I cook it on? How long? Any tell tale signs to look for? Why do I suck at this?

Cook it slower (i.e. lower flame) with a cover on the pan. Or bake it. Or slice it up and make stir fry.

You can start it on high heat to brown the outside, but then reduce the heat to low and cover.

Patience. Chicken is best at lower heat - 300 degrees or so.....

have you tried pounding the breast first? if you flatten it a bit it cooks faster and more thorough

Cook the outside on the stove and finish it in the oven.

I usualy filet a bonless chicken breast, cooks in about 8-10 minutes

Durgan, any chicken with a bone will need about 25 minutes of cook time between 325-350F regardless of the method you use

POUND IT !!! to make it the same thickness all over. Then put it on the heat, and watch the opaqueness move from the bottom to the top. When it reaches 75% of the way, turn it. Do not turn it more than once, you WANT all that carmelization (the dark bits stuck on the bottom are called "fons", remove chicken when done, add garlic (or onions or shallots) and saute till golden, then deglaze with white wine and stock, and reduce, add a small amount of butter, and sauce the meat.

Garlic smashed potatoes are great.
