how long should i wait to break a cake after it has been colonized?

Can i do it right away? Can it be within 24 hours or so after the jar is fully done?

After the jar appears fully colonized, wait about 3 days. You do this to ensure the inside is fully colonized. You should dunk the cake for 12-24 hours to replenish moisture.

If you're using a fully colonized cake for a casing, could you still dunk the before making the casing? The reason I ask this is because I put my casings back into the incubator for a day or two before putting them into the fruiting chamber. Does dunking promote fruiting, or is it simply a means of re-hydration?

If your using 4 holes (around the outside edge) to inoculate, wait about a week.
Sometimes only the outside is colonized and looks ok.
If your using a 5th hole in the center as well, wait about 3 days, because it is colonizing from the inside out as well.

i use only a center hole. seal down. this way my cakes are insured to colonise the center first so i KNOW when they are 100% done. seal down helps with contams same for only using a center hole. at day 4 after inoculation i flip the jar so the lid is now on the bottom. this way contams get to fight gravity while they are on the quest to fuck my cultures up. i powder my cakes to dust and use them as spawn like this. finaly GOOD LUCK!

But what about ventilation? If you flip them then I guess they don't get much air. Or is it not that important? (It would also be easier since there's no need for tyvek and fresh air)

Just the oposite. Flipping the jars puts the holes at the bottom so the CO2 can excape.
